I got this from www.5dollardinners.com and it is SUPER yummy!!
Ingredients
1-2 cups leftover crumbs from sweet potato chips ($.20) Any other potato chip will do!
1/2 tsp salt and pepper
1/4 tsp cinnamon ($.01)
3 chicken breasts ($2.37)
1 egg ($.15)
2 Tbsp canola oil ($.15)
1 butternut squash ($.67!!!)
I went to a grocery store closing sale. Will post details later in the week!6 red potatoes ($1)
1 Tbsp extra virgin olive oil ($.10)
1 tsp Garlic powder ($.05)
Salt/Pepper, to taste
Ketchup ($.10)
Directions
1. In mini food processor, grind potato chips/leftover crumbs to make about 1 cup. Place ground potato chips in plastic bag. Add cinnamon, salt and pepper. Shake. Place ground potato chips in bowl or on plate for coating the chicken. In another bowl, whisk 1 egg with 1-2 Tbsp oil.
2. Dip chicken breast in egg/oil mixture. Then dip into potato chips. Cover both sides of the chicken. Place in 8x8 baking dish. Do this for each chicken breast. Bake chicken for 45-55 minutes at 350.
3. Scrub and wash red potatoes. Cut into 1 inch cubes. (I prefer to leave the skin on.) Saute in skillet with 2-3 Tbsp olive oil. Season with salt, pepper and garlic powder. Cook for 7-9 minutes, until soft and tender. I typically add about 1/2 - 1 cup of water to speed up the cooking process.
3. Cut squash in half lengthwise and place face down in glass baking dish. Add 1/4 inch of water to the baking dish. Bake at 350 for 50-60 minutes.
4. Serve sweet potato crusted chicken with butternut squash and sauteed red potatoes. With ketchup, of course! I took a lovely photo of this meal, but I'm a bit baffled as to what happened to it. Poof, it's gone!
